Hearty main dishes
Ibizan cuisine is all about fresh, local ingredients – from the sea and the land:
- Bullit de Peix – perhaps the island’s most typical dish: a fish stew made with grouper, scorpionfish or John Dory, with potatoes and aioli. In the second course, the stock is used to make Arroz a Banda (rice).
- Sofrit Pagès – a hearty farmhouse stew made with various meats, potatoes, sobrasada and butifarra, seasoned with cinnamon, saffron and paprika.
- Arroz de Matanzas – a hearty rice dish whose main ingredient is Porc Negre , the black pig of the Pityuses.
- Paella – served on the beach and usually made with the local catch of seafood.
Sobrasada, Aioli & savory classics
Sobrasada is a spreadable, mildly spiced raw sausage made from pork and paprika – on bread or as an ingredient, it is found everywhere in many dishes. Aioli, the strong garlic mayonnaise, is traditionally served on Ibiza with bread, fish and meat and starts many meals.
Sweet specialties
When it comes to desserts, Ibiza has true classics to offer:
- Flaó – the most famous Ibizan dessert: a cheesecake made with fresh sheep’s and goat’s cheese, refined with mint and anise.
- Greixonera – a creamy pudding traditionally made from leftover ensaïmadas with cinnamon and lemon.
- Orelletes – thin, fried anise pastries that are often served at celebrations.
Hierbas Ibicencas & drinks
The island’s iconic drink is Hierbas Ibicencas – a sweet herbal liqueur created by macerating often more than a dozen herbs such as fennel, thyme, rosemary and mint. It is drunk ice-cold as a digestif and made according to traditional family recipes. Local wines also pair well with it, as winemaking has a long tradition on Ibiza too.
